Owners Brad Orrison and his sister, Brooke Orrison Lewis, opened the restaurant in August 2001 as a tiny, 300-square-foot, take-out shed. Within five years, it had turned into a sprawling, 10, 000-square-foot food experience, smoking more than a ton and a half of meat per day.
