Inner courtyard of Cognac Castle. The black fungus is so characteristic of Cognac that even the white limestone facades of the town and the maturing cellars ("chais") are permanently blackened by it. The black colouring of the cellar walls is a direct result of the production of the spirit and a visible sign of the long Cognac tradition. Inner courtyard of the Château de Cognac. The stones are black in colour because a fungus has particularly good living conditions on them in the alcoholic air. Rue du Château, Cognac, Nouvelle-Aquitaine, France
