The brownie was created in the Palmer House kitchen at the end of the 19th century on the instructions of Bertha Palmer for the Columbian Exposition World's Fair of 1893. It is still one of the hotel's most popular desserts and can be ordered in the parlor or purchased to take away from a small store on the second floor. For the World's Fair in 1893, the now world-famous brownie was created in the Palmer House in Chicago.
