Beetroot on sale at a farm shop near Ashford in Kent, Monday January 16, 2006, as Tesco announced that it has shed its humble image to become a trendy "superfood" - and sales of the vegetable are going through the roof. After years of decline, sales of fresh beetroot at Tesco are soaring, rising by a staggering 50%. The supermarket is tipping the vegetable as "the next big superfood" and said that young people recognising the health benefits of beetroot and fashionable restaurants are featuring it on their menus.
