Description
|
The traditional way of making of Charcoal, this method is still used in some Mediterranean countries. Its very hard and dirty work. First hard wood is cut in to logs ( two or three feet long ) built into a stack up to about the height of a man. This is then covered with bracken, staw or other vegetation and then very carefully covered with ashes and earth to form a clamp, with some holes around the sides and on top. Through a small hole a fire is lit, at the base, as the fire spreads through-out the clamp, when to the burners,s satisfaction all the holes are plugged with mud. It take some time with this method and considerable skill. Then the burner has to watch the clamp for days. If a strong windget up the smouldering fire inside could break out, and the whole clamb lost, also earth is added to the wall at any weak places. When the fire is burnt out and is cool enough for the burner to open up the clamp and rake out the charcoal, throwing it on a riddle which sieves out the ashe and dust, the charcoal is shoved in to bags and sold. To be used on barbecues and in restaurants. Cyprus ( Southern ) The Mediterranean |
